if you have a source of supply for real wasabi, you need the oros grater: the rhizome, i.e. the root of the spicy japanese sea horseradish, is ground into a paste and often served with sushi. of course, you can also use european horseradish or ginger and thus have a fresher ingredient than the commercial, green tube paste.
